Peach Caprese Salad

Ingredients

  • Mint Leaves¼ cup
  • Basil Leaves¾ cup, divided
  • Extra Virgin Olive Oil½ cup
  • Kosher Salt½ tsp
  • Peaches5
  • Buffalo Mozzarella8 ounces
  • Balsamic GlazeFor serving
  • Freshly Cracked PepperTo taste

Directions

Step 1
First, make basil-mint olive oil. To a blender or food processor, add the mint leaves, ¼ cup basil leaves, olive oil, and salt. Blend until smooth, with only small flecks of green leaves remaining. Set aside.
Step 2
Slice each peach into eighths and place in a large bowl. Dress the peaches with the prepared olive oil and toss to coat. Slice the buffalo mozzarella, then tear each slice into thirds and add it to the bowl with the peaches. Add the remaining ½ cup basil leaves and toss once more to evenly distribute the mozzarella throughout the salad.
Step 3
Arrange the peach caprese on a serving platter. Drizzle with balsamic glaze and finish with a few cracks of black pepper before serving.
